1 Place the chicken breasts in the bottom of a 6-quart or larger slow cooker. 2 Add the drained black beans, salsa, and corn. 3 Add ¼ cup water, minced garlic, chili powder, cumin, oregano, cayenne, and freshly cracked black pepper. 4 Stir briefly to distribute the spices. 5 Cover and cook on low for 8 hours or on high for 4 hours. 6 Cook the rice according to the package directions to yield 6 cups, timing it to finish with the chicken. 7 Remove the lid and stir with a fork to shred the tender chicken. 8 Taste the chicken mixture and add salt if needed. 9 Build each bowl with 1 cup rice topped with 1 cup of the shredded chicken mixture. 10 Top with shredded cheddar and sliced green onions. Notes Hands-on time is only about 10 minutes; the slow cooker does the rest (low 8 hours or high 4 hours), so start it in the morning for a weeknight dinner.
