Meanwhile, heat 2 tablespoons olive oil in a medium saucepan over medium heat until shimmering.2Add carrots, celery, and onion and cook, stirring, until softened but not browned, about 4 minutes. Add garlic and cook, stirring, until fragrant, about 30 seconds.
