Sausage and Peppers

Step-by-step
1 Heat the olive oil in a large skillet over medium heat until shimmering. 2 Prick the sausages with a fork in several places. 3 Add the sausages to the skillet and cook until browned on all sides, about 10 minutes. 4 Transfer the sausages to a large bowl and pour off all but 1 tablespoon of fat from the skillet. 5 Cut the sausages in half diagonally once cool enough to handle and set aside in the bowl. 6 Add the onion and peppers to the skillet and cook until the peppers begin to wilt, about 5 minutes. 7 Stir in the garlic and tomato paste and cook until fragrant, about 1 minute. 8 Add the wine, water, oregano, sausages, and any accumulated juices. 9 Cover and cook until the sausages are cooked through, about 5 minutes. 10 Stir in the balsamic vinegar and cook uncovered until the sauce thickens, 1 to 2 minutes. 11 Serve hot. Notes Stovetop only — no oven needed. Serve on Italian sub rolls or with mashed potatoes. Hot Italian sausage can replace sweet; if avoiding alcohol, substitute chicken broth for the white wine.
