1 Preheat the oven to 400ºF. 2 Mix the chili powder, paprika, onion powder, garlic powder, cumin, cayenne, sugar, and salt in a small bowl; set aside. 3 Cut the onions and bell peppers into 1/4-inch wide strips. 4 Slice the chicken breast into thin strips. 5 Add the chicken and vegetables to a large baking sheet or casserole dish. 6 Drizzle the cooking oil over the chicken and vegetables. 7 Sprinkle the fajita seasoning over top and toss until everything is well coated. 8 Spread the chicken and vegetables evenly over the baking sheet. 9 Bake for 35-40 minutes, stirring once halfway through. 10 Squeeze the juice from half the lime over the chicken and vegetables straight out of the oven. 11 Scoop the filling into the center of each tortilla. 12 Top with cilantro, a dollop of sour cream, and an extra squeeze of lime. Notes Oven at 400ºF. Use the largest sheet pan you have so the chicken and vegetables aren't crowded, otherwise they steam instead of caramelizing. A packet of store-bought fajita seasoning can replace the homemade spice blend. Chicken thighs can be substituted, though cooking time may vary.
